A modern Italian tavern tucked into the charming McCormick Ranch neighborhood, Campo Italian Bistro and Bar offers "field-to-farm" cooking with a menu built around from-scratch pizzas, paninis, and fresh pasta with a bevy of craft beers, wines, and cocktails. Starting with authentic family recipes from chef Jeremy Pacheco, Campo uses only the freshest seasonal ingredients, cooked with local, organic foods from Arizona producers. Jeremy Pacheco, Director of Culinary

A ninth-generation Arizonan who grew up working on the family farm outside Tucson, Chef Jeremy Pacheco has always had a passion for fresh, delicious food. Now the Executive Chef & Culinary Director for Genuine Concepts, Chef Pacheco oversees the entire kitchen team for this Phoenix-based restaurant group behind The VIG, The Little Woody, The Womack, Campo Italian Bistro & Bar, and The McMillan. But it was his first job outside the farm, washing dishes at a local restaurant, that convinced him that his career would be in the kitchen rather than in the fields.

After working his way up from dishwasher to lead cook at the Sheraton El Conquistador in Tucson, Pacheco decided to hone his skills at the Scottsdale Culinary Institute. Graduating with a degree in Culinary Arts and Restaurant Management, Pacheco landed at The Phoenician’s Terrace Dining Room before being lured to Las Vegas to be chef de cuisine at Wynn’s SW Steakhouse and tournant chef for all Encore and Wynn properties. While serving as chef de cuisine at Society Cafe Encore (named one of the “Best New Restaurants in America” by Esquire magazine), Pacheco also won the “Vegas Uncorked Bon Appetit,” an Iron Chef-inspired competition for master chefs of Las Vegas.

In 2010, Pacheco joined Hermosa Inn in Paradise Valley, AZ as Executive Chef, before returning to Las Vegas for a two-year stint as the executive chef of Society Café Encore/Wynn. Returning to Arizona in 2015, Pacheco most recently served as the award-winning executive chef at LON’S at the Hermosa Inn. Now at Genuine Concepts, Pacheco is excited to bring his passion for fresh, delicious and flavorful fare to this popular collection of neighborhood-focused restaurants.
